Einkorn

An ancient grain cultivated for thousands of years, Einkorn is considered one of the earliest forms of cultivated wheat. It has gained popularity in recent years due to its rich nutritional profile, unique flavor, and that it is the only completely nonhybridized wheat left on Earth.

It’s simpler genome compared to modern wheat makes it the easiest-to-digest of all wheats while it also offers higher levels of certain nutrients, such as protein, essential fatty acids, and antioxidants, including lutein and beta-carotene.
